8 oz. high quality Vanilla Ice Cream
1 1/2 lbs Milk Chocolate
Melt ice cream and heat to scaulding then place in mixing bowl. . Slowly mix in chocolate and keep mixing until consistent. . Let mixture cool until it is room temperature and firm to the touch. . Place in mixing bowl and beat until it becomes aerated and lighter in color, about 1 to 2 minutes. Using a small ice cream scoop or melon baller, form into balls. Roll balls with your hands. Drop and roll balls in cocoa powder or your choice of toppings such as chocolate sprinkles, crushed nuts, crushed sugar cones etc.. Variations . Mint truffles: Use mint chocolate chip ice cream and white chocolate. Double Chocolate Chocolate Truffles: use chocolate ice cream and dark chocolate. Black Raspberry Truffles: use black raspberry ice cream and white chocolate.
You get the idea. Use your imagination. Just about anything goes. Just make sure to use high quality ingredients. This recipe makes about 60 truffles.
